From the Colonial Quarter
The Taberna del Caballo and the Bull & Crown Publick House at the Colonial Quarter on St. George Street are the latest restaurant projects for Chef Michael Lugo of Michael’s Tasting Room in St. Augustine.
These two restaurants are part of the two-acre Colonial Quarter outdoor history museum in a public/private partnership with University of Florida and entrepreneur Pat Croce (who also owns the St. Augustine Pirate  & Treasure Museum next door).
The British-style pub and Spanish-themed Taberna now showcase Chef Lugo’s creative vision.
“Food comes first†Chef Lugo explained. “We cook from scratch with great ingredients made with love. We have full bars with special cocktails, select wines and interesting beers. It’s the complete package for dining, drinking and good conversation on St. George Street.â€
Chef Lugo’s culinary curiosity began as he watched his Grandmother preparing traditional Puerto Rican dishes at home. His love for great food combined with a competitive drive spurred him into the world of fine dining where he learned from top restaurateurs like Chef Richard Chamberlain in Dallas, Texas. From there his skills and love for food grew until he had an opportunity to open Michael’s Tasting Room (formerly The Tasting Room), a top restaurant in St. Augustine, renowned for its wine list. Pat Croce was a frequent diner and loved Chef Lugo’s style. T
