Mouth-Watering Community Classes At FCTC

Top chefs at the First Coast Technical College are offering the following community enrichment classes in February.

  • Shrimp & Seafood – Thursday, Feb. 18 from 6-8 pm with Chef Tim Helfinstine. Registration is $40

Create easy and indulgent meals using alternative proteins. We will explore sautéing, foil papillote and oven frying and prepare compound butters, tartar sauce and mango ginger sauce.

  • Charcuterie – Tuesday, Feb. 23 from 6-9 pm with Chef Kit Kiefer. Registration is $45

What is Charcuterie? It refers to cooked, cured or smoked meats such as bacon, ham, sausage, terrines, rillettes, galantines, pâtés and dry-cured sausage. Charcuterie is a French culinary art since the 15th century. This hands-on class is how to prepare a variety of sausage the old-fashioned way.
